This summery and refreshing mousse cake combines a number of different textures. A Dacquoise sponge cake made with almond flour and coconut flakes, a crispy layer with a refreshing lime flavour, light lime mousse, and a yellow “heart”- passion fruit creameux – a delicate cream filling made with ripe passion fruit and custard. All finished off with a rich green mirror glaze.
